Ingredients: 500 ml cooked Sweetcorn; 400 g Cherry Tomatoes, halved; 1 Red Onion, chopped; 2 Avocado, diced; 30 g Fresh Basil, roughly chopped; 30 ml Balsamic Reduction; 15 ml Wholegrain Mustard; 30 ml White Wine Vinegar; 5 ml Salt; 3 Garlic Cloves, chopped; 1 Chilli, deseeded and finely chopped

Ingredients

Salad
500 mlcooked Sweetcorn
400 gCherry Tomatoes, halved
1Red Onion, chopped
2Avocado, diced
30 gFresh Basil, roughly chopped
Dressing
30 mlBalsamic Reduction
15 mlWholegrain Mustard
30 mlWhite Wine Vinegar
5 mlSalt
3Garlic Cloves, chopped
1Chilli, deseeded and finely chopped

Steps

Drain cooked corn and leave to cool.

Once cooled, place it into a large serving bowl and add the remaining Salad ingredients.

Place the Dressing ingredients together in a jar and close. Shake well and once emulsified, pour over the salad.

Gently toss the salad to coat the whole Salad with Dressing.
