A well balanced diet👌 yam is the carbohydrate, spinach minerals, tomato & peppers vitamins, palm oil fats & oil & the egg is the source of protein in the recipe👍 but you can add fish or meat if you want!

Peel, cut & wash yam add water little salt & cook until soft, strain water & add into a warmer set aside.

Wash, cut & blend tomato, scotch & red pepper together with the onions add into a pot & cook until water drains. In the mean time slice & wash your spinach.

Add in palm oil into the tomato paste fry for a couple of minutes add 1/2 cup water add in seasonings maggi, salt & onga to your taste stir well add in the chopped spinach, cover & allow to cook for a couple of minutes.

Then crack eggs in a separate bowl check for broken shells &
Remove then add into the sauce & keep stirring until egg is properly cooked then off the heat & serve. I added some sliced onions at the end for aroma😋😋😋🍽enjoy!
