Cooking Instructions
- 1
First we prepare the sauce: Clean and chop (or grate) the onion, celery and the carrot, brown it in extra virgin olive oil, in a saucepan. Add the minced meat and brown over medium heat, stirring often. Deglaze with the wine until evaporation. Finally add the tomato puree, salt and a few basil leaves and as soon as it starts to boil, lower the heat, cover and cook for about 30-40 minutes on a not too high heat.
- 2
Dice the mozzarella and let it drain in a colander; grate the cheese
- 3
When everything is ready, the sauce is better to let it cool, let's continue with the preparation of the lasagna. For convenience, I mix the sauce and béchamel together, but you can also add them separately.
- 4
Distribute the sauce on the bottom of the pan, cover with a layer of lasagna, then pour the diced mozzarella, and spread some grated cheese. Cover with another layer of lasagna, put the sauce and béchamel over the entire surface, finally ham, mozzarella and grated cheese. sauce and béchamel to cover the entire surface of the first layer,
- 5
Continue like this until you reach the edge, alternating the various layers, ending with one of lasagna. Finally, on the surface of the last layer of lasagna, distribute the sauce with the bechamel and plenty of grated cheese,
- 6
I make 4 layers, but you can decide to make one more or one less, according to your preferences.
- 7
Cooking: Convection oven at 220 ° for 25 minutes + 3 minutes of grill (if you prefer more crispy on the surface) Leave to rest for a few minutes before serving. The cooking time refers to the total cooking time of the sauce plus cooking lasagna in the oven. You can prepare double doses and freeze the prepared uncooked pan; when you want to prepare it, let it defrost in the fridge and then continue cooking in the oven; in this case it is recommended to use fresh ingredients. The best food is tied to memories. In this case, a lasagna I ate in a farmhouse overlooking Florence, on my first (and so far, only ☹️) visit to Tuscany almost two decades ago. I've made this several of times. It originally was a cheese lasagna but I tweaked it a little bit. I kind of merged it with another lasagna recipe. I suggest that you double the cheese mixture just because I always run out of it before I'm done. But other than that, I hope you enjoy this recipe. Teapot1991m
