Gather all the ingredients to make the seviyan. Heat ghee in a pan, add the vermicelli, and roast for about 2 minutes. If your vermicelli is already roasted, you can skip this step if you prefer. Next, add the whole milk.

Pour the milk into the pan and cook on low heat, stirring occasionally. The vermicelli will soften and rise to the top as the milk thickens.

Add sugar to taste and cook for another 5 minutes. Then add the chopped nuts, raisins, and cardamom powder. (For a finer cardamom powder, you can grind it with a little sugar.) Your seviyan is now ready.

Serve the seviyan hot in bowls or chill in the refrigerator and serve cold, garnished with extra nuts on top. This delicious sweet vermicelli dessert is quick and easy to make.
