Ingredients

  • 2large (about 2 cups, cubed) potato
  • 1/2(about 1/2 cup, chopped) white onion
  • 1(about 1 cup, chopped, any color is fine) red or green bell pepper
  • 1/4 cup(chopped) green onion
  • 5eggs
  • 3/4 cupShredded cheese
  • 1/2 tspGarlic powder
  • 1/2 tspSalt
  • 1/4 tspWhite pepper
  • 1 tbspCooking oil

Steps

20 minutes
  1. 1

    Heat oil in a skillet over medium heat. Add potatoes and sauté until golden.

  2. 2

    Add onion and bell pepper. Cook until softened.

  3. 3

    Stir in green onion, garlic powder, salt, and white pepper.

    Make 5 wells in the mixture. Crack eggs into each well.

    Sprinkle cheese evenly over the top.

    Cover and cook until eggs are set and cheese is melted.
