Litti Chokha

Litti chokha is a very popular and famous dish from the state of Bihar. It is prepared using wheat flour with the filling of sattu and some spices. Chokha is prepared with roasted egg plants, tomatoes and potatoes. The smokey flavour takes this dish to another level. It tastes delicious served with chutney and onion.

Litti chokha is a very popular and famous dish from the state of Bihar. It is prepared using wheat flour with the filling of sattu and some spices. Wash and pat dry the eggplant, then make 3 slits around it. Now put garlic cloves and green chilies in the slits. Apply a little oil and roast it on the gas flame on a wire rack until it is completely roasted and the skin gets black.

Apply little oil to the tomatoes and roast them until black. Now peel the skin from the eggplant and tomatoes. Add it to a bowl along with mashed potatoes.

Now just run a knife through it so that it is roughly chopped. Add all the ingredients under chokha to it and give it a good mix. Now mash it using a potato masher. Keep it aside for later use.

To make litti, add flour, salt, carom seeds, oil, and baking soda to a bowl. Now start adding little water at a time and make a little stiff dough. Knead it well. Cover and keep it for 15 minutes.

To make the filling, add all the ingredients under litti filling and give everything a good mix. The filling should not be too dry or too wet.

Now divide the dough into 10 equal portions. Take one dough ball and with the help of your thumb and fingers make a bowl-like shape and put around 1.5 tbsp filling in the cavity. Now bring the edges towards the centre and cover it over the filling making sure that it is sealed properly. Prepare all the litti in the same way.

Now heat a heavy bottom pan and grease it with very little oil. Arrange all the prepared litti in the pan and roast it for a few minutes on medium heat so that the outer part gets light brown colour. Now transfer the litti to a stainless steel wheat strainer and keep the strainer on top of the iron tawa for roti. Now cover the strainer and cook litti on medium heat until it is done. Keep changing the sides of litti every 10 minutes to get even colour on it. You can even make litti in the oven.

Now apply little ghee on prepared litti and put it on the wire rack to get the charred look which we get while we cook it in cow dung. Now dip it in the bowl of ghee.

To make chutney add all the ingredients under chutney in a mixer jar and grind it to a smooth paste.

Serve litti chokha along with chutney and onion.
