Leftover Nachos

Nachos are a great snack, party appetizer, or even a quick weeknight dinner you can have ready in just a few minutes. I love how versatile they are because you can make them with whatever ingredients you have on hand, like this time when I used some cheddar cheese and cooked ground meat I had from the day before.

Nachos are a great snack, party appetizer, or even a quick weeknight dinner you can have ready in just a few minutes. I love how versatile they are because you can make them with whatever ingredients you have on hand, like this time when I used some cheddar cheese and cooked ground meat I had from the day before.

Heat a skillet with a little oil, add the cooked ground meat, and sauté for a few minutes. Add the crushed tomatoes and cumin, and cook for a few more minutes until everything is well combined. Taste and adjust salt and pepper if needed.

Spread the tortilla chips on a large tray, add the meat in the center, and top with guacamole. In a small saucepan, melt the cheddar cheese with a splash of milk, stirring until you reach your desired consistency. Pour it over the guacamole and enjoy!

These nachos are also delicious if you have leftover roasted chicken or turkey. If you don't want to make guacamole, just add diced avocado and tomato on top of the meat. Sour cream is also a great addition. For a different twist, you can add chorizo to the sauce.
