Salmon and Herb Hachis Parmentier

Peel and roughly chop the potatoes.

Bring a pot of water to a boil. Add salt, then add the potatoes and cook for 15 minutes.

Meanwhile, remove the skin from the salmon and cut it into large cubes. (If using frozen salmon, thaw it first.) Set aside.

Preheat the oven to 400°F (200°C). When the potatoes are cooked, drain them and return them to the pot or place in a large bowl.

Season with salt and pepper, then add the milk and garlic and herb cream cheese.

Mash the potatoes with a potato masher or fork until smooth and creamy.

Butter a baking dish. Add the salmon cubes, season with salt and pepper, then spread the mashed potatoes on top.

Sprinkle with breadcrumbs and add a few small pieces of butter on top if you like. Bake for 30 minutes at 400°F (200°C).

Remove from the oven and sprinkle with chopped chives if desired. Enjoy!
