Cooking the beans:
I'll boil them really hard with salt for like 10 minutes. Kill the heat and cover for 30 minutes. Drain and rinse. Boil really hard with salt for 30 minutes. - 2
Make some taco seasoning:
Achiote powder, chile powder, black pepper, white pepper, cumin, oregano, sage, salt, sugar, msg... however you like it! You can also use taco bell sauce in place of seasoning. - 3
While the beans are cooking,
Cut up 2.5 of the tomatoes and the green chile. Simmer them with a splash of water and the taco seasoning for like an hour - 4
Brush the tortillas with oil and bake them on 325 for like 12 minutes. Watch very carefully to get them crunchy but not burnt

Assemble! Tortilla, beans, tortilla, sauce, cheese.
Bake it for a couple minutes to melt the cheese

Top with some tomatoes and enjoy!
