Preheat the oven to 325 F and line 2 cookie sheets with parchment paper. Mix both sugars together until blended. Add the salt and almond flour and mix well.

Add 1 egg white at time and mix until crumbly. Add the almond extract.

Using a large (~2 tablespoon) cookie scoop, scoop the dough onto the parchment. Sprinkle confectioners sugar on top of each cookie. Use a glass and press the cookies lightly until flattened. Sprinkle more confectioners sugar over each cookie.

Bake for ~22 minutes, until the edges are lightly browned. Let cool on the baking sheet.
