Ingredients

30 minutes
3 servings
  1. 3/4th cup fine sooji / semolina
  2. 1/2 cupghee / clarified butter
  3. 3/4th cup sugar
  4. 1 pinchsalt
  5. 1/4th tsp cardamom powder
  6. 5-6cashewnuts
  7. 5-6almonds
  8. 4walnuts
  9. 1 tbspraisins
  10. 2bay leaves
  11. 1.5 cupsmilk

Steps

30 minutes
  1. 1

    Heat 1 tbsp ghee in a pan or wok.Add semolina/rava /sooji and roast until it changes colour to light brown.Roast for 2-3 minutes and set aside.Add milk and soak sooji for 15 minutes.

    Heat 1 tbsp ghee and add sugar.Toss till it is caramelized. Add 1/2 cup water and boil till the caramelized sugar melts. Add the soaked sooji and 2 bay leaves. Bring it to boil.Add some more milk if needed and rest of ghee and pinch of salt to balance the sweetness.

    Add lightly roasted chopped nuts and raisins. Sprinkle cardamom powder and stir taking care that no lumps are formed. Cook till halwa leaves the sides of pan.Serve hot garnished with dry fruits and relish soft,creamy caramelized Shahi Sooji Halwa/ Semolina Pudding in breakfast or as an aftermeal dessert.
