I had to up the white Chicken chili recipe I had and I called this fiesta chicken chili. It's so darn delicious my taste buds were partying in my mouth. ❤️

Ingredients

  1. 4-5chicken breast diced up
  2. Few Tablespoons olive oil
  3. 1 teaspoonkosher salt to taste
  4. 1 teaspoongarlic powder to taste
  5. 1 tablespoonchili powder
  6. 1/2 teaspoonblack pepper to taste
  7. 1/8-1/4 teaspooncayenne pepper
  8. 2 tspground cumin
  9. 1 packMcCormick white chicken chili Seasoning mix
  10. 1/2 cupwater
  11. 1/2 cupchicken broth
  12. 1 canrotel or 1can petite diced tomatoes and 1 can green chiles
  13. 3 clovesgarlic minced
  14. 1 canblack beans drained well
  15. 1 canpinto beans I don't drain
  16. 1 cancannellini beans I don't drain
  17. 1 bagfrozen birds eye baby gold and white corn
  18. 1/2 teaspoonkosher salt
  19. Juice from 1 lime
  20. 1-2 tablespoonscilantro finely chopped
  21. Toppings 👇
  22. Sour cream
  23. Salsa
  24. Tri color tortilla (strips)
  25. Shredded mexican cheese blend

Cooking Instructions

  1. 1

    Cook chicken in a large deep skillet in olive oil till done then mix in the first 6 ingredients and continue to cook for a few minutes

    Add in the next 12 ingredients and bring to a boil then reduce heat and simmer on low for about 20 minutes. Stirring occasionally

    Serve with a dollop of sour cream, salsa, shredded cheese and tortilla strips

  4. 4

    Enjoy. It so good with buttered cornbread on the side.
