Ingredients

10-12 People
  • 2 1/2large Cups of Rice (Long grain or Short grain Rice)
  • 10-12 piecesChicken cuts/Beef Chunks
  • Vegetables Needed - 12 Medium sized Carrots,
  • 1large Bulb of Onion
  • 3Small Green Bell peppers, A handful of Green beans,
  • 2 handfulsGreen Peas, A Can of Sweet Corn
  • Seasonings - 3 sachets of Gino Curry Powder,
  • Halfa teaspoon of Thyme, 3 pieces of knorr Chicken cube,
  • 1small chunk of Ginger, 1/8 Teaspoon of Nutmeg,
  • 1 sachetBenny Chicken Stock,
  • 2 SachetsNora/Napa fried Rice spice or Any Fried Rice Spice
  • 1/2 TeaspoonTurmeric Powder for colour but it is Optional
  • Salt to taste
  • Vegetable Oil

    Prepare the chicken first of all, wash it properly and then, place it in a pot, spice it up using a 1/4 piece of the large onion, Grate the ginger, add one sachet of curry powder, 1 wrap of knorr cube, a tablespoon of salt.

    Add 3 cups of water and boil to get the stock. Boil the chicken until it is tender, this should take about 15 - 20 mins, depending on the type of chicken. When the chicken is ready, remove it from the stock and set it on a plate to dry up. Set it aside for frying.

    STEP 2 - To prepare the rice, measure the quantity needed and place in a large bowl, fill the bowl with boiling water and cover it, let it sit for 25 mins. While that's happening, wash and prepare the vegetables. We need Julienne cuts(cut them as seen in the picture below), for all the vegetables, the carrots, green beans and green peppers. Set aside when done.

    Pour enough oil into a pot or a frying pan and on medium heat and deep fry the chicken on both sides for 6 mins each, making 12 minutes, until golden brown and well cooked inside. If you are not sure if the chicken is well cooked, pierce it deeply with a toothpick, and if no red fluid comes out, it is well cooked.

    STEP 3 - When the 25 mins is up, wash the rice using boiling water and sieve to remove the water and set aside. The next step is the frying of the chicken.

    STEP 4 - Place a large pot on fire, add the chicken stock, another sachet of curry, another wrap of Knorr cube(2in1), the 2 sachets of fried rice spices and let it boil. When it starts boiling, add the rice and add a little more boiling water just to cover it up, so that the rice is completely submerged but not too much water since we would depend on the steam to cook the rice properly so that it is neither "Overdone nor Underdone".

    Therefore, you need to taste for salt, add the required quantity of salt and taste it, the stock needs to taste a bit salty so no worries but do not add excess salt, I used only 3 leveled Tablespoon but it is important to always taste for salt since it might vary. Finally, cover the pot with aluminum foil/ transparent nylon to trap more heat.
    Allow the rice to cook until the water is completely dried, then add the green peas at this point and cover it up completely and turn off the heat.

    DO NOT STIR THE RICE AT ALL.

    NOTE : This is only allowed for natural peas that are still hard, we need them to be a little soft, but if you are using canned peas, Skip this step, because, it is already soft.

    STEP 5 - The next step, we need to stir fry the vegetables, in a smaller pot, add 1 cooking spoon of vegetable oil and a 1/4 piece of onion again from the large piece we used before. Fry, USING A WOODEN SPOON OR SPATULA for a minute after this, add the vegetables and the remaining seasonings, the last wrap of Knorr cube and finally the sachet of Benny chicken stock and fry for only 20 seconds immediately and turn off the heat.

    Cover the pot and let the remaining heat from the pot cook the vegetables. After this, open the pot and add the can of sweetcorn and can of green peas(if you are using canned peas). And stir it properly.

    NOTE : FOR THE NEXT STEP YOU ARE REQUIRED TO USE A WOODEN OR PLASTIC SPOON TO PREVENT THE RICE FROM BREAKING

    STEP 6 - The next step involves frying the rice, this would be done in 4 badges, divide the rice, the stir fried vegetables and the remaining onions into 4 parts. In a pot, add 1 large cooking spoon of oil, and fry a 1/4 of the onions, for a minute. Next, add a 1/4 of the rice and a 1/4 of the stir fried vegetables IN THIS SEQUENCE and with the aid of a cooking spoon, stir until everything is evenly combined, this should take just 2 minutes and after that, transfer into another clean and dry pot

    Scrape the leftover rice on the pot and repeat the previous steps, until everything has been used up.

    NOTE - The pot of Fried Rice must be left halfway open, through out the day, the pot must never be closed completely, to keep it fresh through out the day.
    To store it for another day, just wait until it has completely cooled down and then freeze it. Whenever you are ready to eat it, just take it out of the freezer, some hours earlier and wait for it to come to room temperature.

    Then reheat it a pot or place it on a plastic/ceramic/glass plate and reheat for some minutes in a microwave.
