Warm oil olive in a pan and add beef cubes. Add salt and pepper. Sear the meat, 2-3 minutes per side. Add onions, garlic, 1 cup beef broth, Italian seasoning and Worcestershire sauce. Let simmer for about 3-4 minutes.

Put the contents in the slow cooker and add the remaining 3 cups beef broth, 1/4 cup water and Cook 10 hours low or 5 hours high.

Add the halfway mark (2.5 hours high, or 5 hours low), add carrots and potatoes.

If needed, in the last 5 minutes or so, add 2 tablespoons of corn starch to thicken and stir it in good.
