Cheesy Orzo

A super easy and tasty homemade side dish.

Ingredients

4 servings
  1. 1 tbsp.butter
  2. 1/2yellow onion, finely diced
  3. 2 clovesgarlic, minced
  4. 1 cuporzo pasta, uncooked
  5. 1 1/2 cupchicken broth
  6. 1/2whole milk or half and half
  7. 1 cupshredded cheese (I used cheddar and Colby jack)
  8. Salt and pepper to taste

Cooking Instructions

    Heat the butter over med-high heat in a saucepan with a tight fitting lid. Once it's melted, add the onion and cook until soft. Then add the garlic and cook another minutes, until fragrant.

    Stir in the orzo and toast it, stirring pretty often, until it browns a little bit. Then pour in the broth and milk. Bring it up to a boil. Once it's boiling, stir it and put the lid on. Lower the heat the med-low.

    Cook for 10-15 minutes, until the liquid has mostly absorbed and the orzo is soft. Stir it once or twice while it Cooks. Once its done, remove it from the heat, stir in the cheese until melted and season to taste.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
