I rarely buy crispy chicken from outside. I can count the times on one hand.
Understandable with a big family. I could buy for everyone, but it wouldn't be satisfying. If I wanted to satisfy everyone, it would be too expensive. Heheh. Besides saving money, the taste isn't much different from my homemade crispy chicken. 😋😋Hahahah.. promo. 😬😀

This recipe has been a staple for years. It's been in my kitchen recipe list for over a decade.
I got the recipe from a cousin when I was staying with relatives during high school in the 2000s. Ahahah, showing my age 😅. Even though staying with others has its downsides, I learned a lot. 😞😓Among them, this recipe and becoming independent, of course. 😁😂

Oh yes, the marinade can be adjusted to taste. Sometimes when I'm busy and lazy, I just season with garlic and pepper. This time it's the complete version.😃☺️

For the flour, you can measure in grams or tablespoons. The key ratio is 1:3. This flour can also be used for frying shrimp, tofu, or fish fillets. Make a lot at once to stock up. Store in a tightly sealed jar.
Versatile!

Ingredients

  • 2.2 lbschicken, cut as desired
  • 1egg
  • 🔹🔸Chicken marinade:
  • 7 clovesgarlic
  • 4shallots
  • 1 tbspcoriander
  • 1 tsppepper
  • 2 inchesturmeric
  • 1 tbspsalt
  • 🔹🔸Flour ingredients (too lazy to take out the scale, using tbsp. Ratio of tapioca to flour is 1:3)
  • 3heaping tbsp tapioca flour
  • 9heaping tbsp all-purpose flour (do not use high-protein flour)
  • 1 tspfine salt
  • 1 tspground pepper
  • 1 tspcoarsely crushed black pepper (Optional)
  • 1 tspbouillon powder (Optional)
  • 1 tspbaking powder
  • 🔹enough oil for frying

Steps

  1. 1

    Wash the chicken thoroughly. For thick meat parts, pierce with a fork/knife or make small cuts so the seasoning can penetrate the meat.

    Mix all the flour ingredients. Set aside.

    Grind all the marinade ingredients. Then pour and rub onto the chicken until all the skin is evenly coated. No need to add water. Let it sit for at least 1-2 hours. The longer, the better it absorbs. 🍗🍗🔸🔸I: marinate it overnight in the fridge, take it out in the morning, let it reach room temperature before cooking. The seasoning absorbs better.

    When taken out, the chicken will be watery. Pour the marinade water into a bowl and mix with the egg. We will use this as a dip. If it's not enough, add 1 tbsp of the flour mixture and enough water.

    Here's the step for coating the chicken: 1~ roll the chicken in the flour mixture until all surfaces are covered.

    2 ~~ dip it into the egg mixture, making sure all surfaces are evenly coated.

    3~~~ roll it again in the flour mixture, coat all surfaces, gently squeeze and pinch so the chicken becomes curly. But don't squeeze too hard to avoid toughness. Pat lightly to remove excess flour.

    Fry in plenty of oil. The chicken should be fully submerged. I use a pot for deep frying. Use low heat and cover the pot until the chicken is golden brown. Frying takes a bit longer, but don't flip it too much. Be patient.. while waiting, you can cook other things. Oh, don't overcrowd the pot to prevent the flour from falling off.

    Kentucky-style fried chicken is ready to be enjoyed. Healthier and more affordable.
