Salmon is one of my favorite foods—I could eat it twice a week! For a change from the usual rice or potatoes, today I was inspired to make a cold but delicious orzo salad!

Salmon is one of my favorite foods—I could eat it twice a week! For a change from the usual rice or potatoes, today I was inspired to make a cold but delicious orzo salad!
Steps

Place the salmon fillets in a baking dish and drizzle with the sauce (using the ingredients listed: olive oil, mustard, etc.).

Squeeze the juice of half a lemon over the top, add pistachios if using, season with pepper, and pour in a little water—about 1/2 cup.

Bake the salmon for about 25 minutes so it stays moist.

Cook the orzo according to the package instructions.

Once cooked, transfer the orzo to a salad bowl and add the chopped vegetables.

Prepare the dressing by whisking all the ingredients together, pour it over the salad, and refrigerate to chill.

Of course, you can also enjoy it warm if you prefer! Enjoy!

This salad also pairs well with burgers, meat, and more.
