Clean the guajillo and guajón chiles, then boil them. Add the garlic, oregano, cumin, and water, and cook over heat for 5 minutes. Let cool, then blend until smooth. Strain the mixture.

Cook the salsa for 20 minutes. Add water, tomatoes, garlic, and green chile, then blend with salt. Add the pickled chiles, their vinegar, and the cooked sliced carrots.

Cook the chicken pieces with enough water, garlic, and salt for 20 minutes. Then add the peeled carrots and potatoes, and cook until the vegetables and chicken are done.

Shred the chicken breast. Fill the tortillas with the shredded chicken.

Top with plenty of salsa, then add lettuce, sour cream, and cheese.

To prepare, heat a skillet with 1 tablespoon of oil. Dip a tortilla in the mole, then fry it on both sides. Place it on a plate, add the shredded chicken filling, and fold. Place 4 enchiladas on a plate. Brown the chicken pieces in the skillet for a bit.
