We Gujaratis are die hard foodie. We are always ready to try various dishes from various states, regions and countries. Yes, we make changes in recipes as per our taste. Here is one such Sindhi dish, which is my favourite, I made it little differently from their traditional recipe. They fry vegetables , I didn't. I replaced tamrind with Kokum. They added lotus stems, I haven't.

Here is one such Sindhi dish, which is my favourite, I made it little differently from their traditional recipe. They fry vegetables , I didn't. I replaced tamrind with Kokum. They added lotus stems, I haven't.

Wash and soak koum in water. Wash, peel and chop all vegetables. Cut green chillies in slits. Chop ginger finely.

Heat oil, add fenugreek seeds and cumin seeds, once they splutters, add asafoetida and add gramflour and saute it till it turns aromatic. While sauteing flour add curry leaves and green chillies too.

Once flour is sautéed properly add 4-5 cups of water, stir continuously.

Once it starts boiling, add vegetables, turmeric powder and salt. Let it boil again, once it starts boiling, after few minutes add soaked kokum.

Now let it simmer and cook on slow flame till vegetables cook and sourness of kokum is infused properly.

Serve hot with steamed rice or daily meals.
Note:
1. Can add and replace your choice of vegetables.
