
Title: Ndengu stew

This is a recipe that I really love. I got the inspiration from my mom. She would tell us stories of how her mom (our grandma) would take her to a hotel whose main dish was termed "sembe ndengu" which simply means ugali ndengu. Whenever she would tell the story we would just laugh till tears fill our eyes. That story is what inspired me to actually try out the recipe. I really hope you will love it. I will only be illustrating the steps for cooking the ndengu stew, since that is my best part.

Soak the ndengu and then boil for the thirty minutes until soft.

Cut your onion into small and fry until golden brown (medium)

Add ginger and garlic, then stir the add your green pepper (grated)

Chop/grate your tomatoes and add them to your mixture

Add finely grated carrots once the tomatoes start turning dark red

Stir until the carrots soften and form a paste together with the tomato

Add your seasoning cubes the add half a glass of water

Stir well then add the ndengus while drained

Stir the mixture until the ndengu is well coated with the tomato carrot sauce

The mixture will begin to be quite sticky as you stir. Add boiled water until you attain your desired level of thickness for your stew

Cook slowly on medium heat then add well chopped dhania

Serve while hot
