Traditional Popular delicious sweet aromatic Basanti pulao from Bengali cuisine.
Steps

Wash and soak basmati rice for 30 minutes. Strain and dry for 30 minutes.

Add & rub turmeric powder and grated ginger,1 tsp ghee to dried basmati rice Keep aside for 1 hour to marinate.

Add 1 tsp ghee in small tadka pan. Add almonds, pistachio nuts and saute for 30 seconds. Off the flame. Add raisin, mix well. Keep aside.

In cooking pan add heat ghee. Add cinnamon stick, cloves,bay leaf and dry red chilli. Saute for 30 seconds.

Add marinated basmati rice. Saute for 2 minutes. Add fried dryfruits, salt, sugar and mix well. Add hot water. Transfer it in pressure cooker vessel. Pressure cook for 3 whistles. (If using pan cooker then add 21/4 cups hot water).

Open the cooker lid as steam escape. Transfer prepared Basanti pulao in serving bowl. Serve/Relish Delicious Basanti Pulao.
