Through the years, growing 6my Mom would occasionally make her chili. It could be birthday celebrations, color cold weather, or just in the mood for, Chili. So for me this is a comfort food. My Mother past on October 6th 2022. So this is the first of a series of recipes in memory of her.

Ingredients

20 servings
  1. 2 poundspinto beans canned
  2. 1 poundred beans
  3. 1 pounddark red kidney beans
  4. 1-1/4 poundground beef 75/25
  5. 1large white onion
  6. 1-1/3 poundground lean pork
  7. 1/4 cupsausage drippings
  8. 2 tablespoonsground cumin
  9. 1-1/2 teaspoonsalt
  10. 2 tablespoonssugar
  11. 1 tablespoongranulated garlic
  12. 1/2 teaspoonground white pepper powder
  13. 29 ouncescrushed tomatoes
  14. 29 ouncestomato sauce
  15. 1 pounddiced tomatoes
  16. 1/3 cuptomato paste
  17. To taste cayenne pepper/ chili powder optional

Cooking Instructions

  1. 1

    Heat the sausage drippings, dice the onion, and sautè them in the drippings. Add and brown the ground pork and beef with the spices..

    Drain and the pinto beans and add. Add the diced tomatoes season lightly with salt, stir and simmer 15 minutes.

    Add the Red bean and dark red kidney beans. Add the tomato sauce and crushed tomatoes. Simmer 20 minutes.

    Add in the tomato paste stir well. Simmer, stirring occasionally, covered for an hour. Serve with chili or cayenne pepper powder, I hope you enjoy!!!
