A few of our favourite ingredients thrown together to make this very tasty sauce.

Heat a large frying pan with 1-2tbsp olive oil. Cook diced pancetta through until fat is rendered down and pieces are cooked through a crisp. Remove from the pan and set aside.

Using the pan with the bacon fat and olive oil remaining. Gently cook through finely diced onion for 2-3minutes until fully softened. Add the finely chop garlic and chilli, continue to gentle cook for another 2-3 minutes to soften and infuse flavour.

Add white wine and dried herbs turn up the heat and fully reduce to 1/4 of the original volume.

Stir in veg stock, and creme fraiche, gently heat. Stir in prawns and cooked pancetta and cook out. Season to taste with salt and pepper. You could even add some tomato purée and/or smoked paprika.

Stir in some cooked pasta (gf if you like) of your choice. Top with some finely grated Parmesan cheese, cracked black pepper and dried chilli flakes.
