Ingredients

  1. 1 kgcarrot
  2. 2medium-sized onions finely sliced
  3. 2-3 clovesgarlic
  4. 1-2slitted green chillies
  5. 1 teaspooncumin seeds
  6. as per tasteSalt
  7. 1 teaspoonred chilli powder
  8. 1 teaspoonfennel powder
  9. 5-6green cardamom grounded
  10. 1 tablespoonmustard oil
  11. 1.5 cupswater

20 minutes
  1. 1

    Chop carrots and put them in cold water. Slice onions, and keep aside with cloves of garlic and green chillies. Ground green cardamoms and keep aside.

    In a pressure cooker, heat mustard oil till it smokes. Turn off the flame and let it cool for a minute. Add carrots.

    Add sliced onions, cumin seeds, salt and red chilli powder.

    Add fennel powder and give everything a nice stir. Add grounded cardamoms and stir.

    Roast and Add 1.5 cups of water and pressure cook for 5-7 minutes.

    Open the cooker and keep it on high flame. Cook for 5-7 minutes. Toeth Gajar is ready to serve. Garnish with slotted green chillies.

    Serve hot with steamed rice.
