Peel potatoes and put them in cold water.

With a grater grate potato. Put the grated potato in cold water. It is important to do so otherwise the potatoes turn black and lose it's taste and colour. Wash the grated potatoes for 5-6 times. It will remove excess starch from the potatoes.

Strain and keep aside.

Heat oil in a wok.

Deep fry grated potatoes in separate batches. Fry till they turn reddish brown and crisp.

You can serve hot or store and serve later. Add salt and red chilli powder when you are about to serve or else it will get soggy. I skip red chilli powder when I am making it for kids.
