Eloise's Pfefferneusse (Peppernut) Cookies
This is a recipe for a cookie that my grandmother Eloise would send to our family every Christmas.
Steps
- 1
Mix together and set aside: flour, baking powder, white pepper, ground cloves, ground nutmeg, ground cinnamon
- 2
Beat together in a mixer: powdered sugar, butter, eggs, water
- 3
Then add: ground walnuts
- 4
Beat well, then add the flour and spice mixture, and beat or stir well -- the dough should be very stiff, so add more flour if necessary.
- 5
Cover the dough and let stand in a cool place overnight.
- 6
Flour hands, and roll dough into little balls 1 inch or less in diameter (a tsp measuring spoon is useful in digging out proper size amount).
- 7
Place on baking pan (I also use a silicone baking sheet) about an inch apart. Bake in a moderate oven (350 degrees) for about 18 min.
- 8
Run pancake turner or spatula under cookies immediately after removing pan from oven. Dump cookies onto a tray to cool. Store cookies in airtight containers.
