Lamb Stew with Potatoes 🍴

Heat the butter and oil in a cast iron or clay pot, if possible.

Add the lamb, chopped onion, unpeeled garlic cloves, whole cloves, bay leaf, thyme, pepper, turmeric, and salt. Sauté for a few minutes.

Cover the meat with boiling water and simmer over medium heat for 1 hour.

Meanwhile, peel the potatoes and cut them into wedges.

Cut the tomato in half or into wedges.

After the meat has cooked for 1 hour, add the potatoes and tomato. Add more hot or boiling water if needed.

Cover and cook for 30 minutes over medium-low heat.

Uncover the pot and bake in the oven at 400°F (200°C) for 20 to 30 minutes.

Serve hot, sprinkled with chopped parsley. Enjoy with homemade bread and condiments like harissa, mustard, ketchup, or mayonnaise.
