Usually, Massaman curry is made with chicken drumsticks or thighs, but I prefer chicken breast, so I decided to try making it this way! 🥰🥰

Sauté the curry paste with the thick part of the coconut milk until fragrant and the oil separates.

Add the chicken breast and cook until done. Pour in the rest of the coconut milk and a little water. Add the potato, onion, palm sugar, fish sauce, and tamarind paste. Simmer over medium heat until the potato is tender.

Add the chickpeas. You can use peanuts if you have them, but I had cooked chickpeas in the fridge, so I used those instead. Serve hot.
