Carrot contains beta-carotene (precursor of vitamin A) which is low in bioavailability. Cooking with fat (such us: butter) might improve bioavailability.
Steps

In pan, melt butter. Cook the onion until softened in medium high heat.
- 2
Add carrot and cook until softened in low heat.
- 3
Transfer into bowl. Add eggs, salt and pepper. Whisk lightly.
- 4
In pan, melt butter. Pour into pan. Cover and simmer until the base is well cooked. Flip over and continue simmering until completely cooked.
- 5
Slide onto a plate to serve. Add tartar sauce and sriracha sauce.
