Firstly, wash the leaves and tap it dry.

Take a bowl, add besan, salt, heeng, coriander powder, pinch of turmeric powder, red chilli powder and garam masala and mix it with water and make a paste like we make for pakoras.

Now take a leaf, and spread this besan batter on the back side of leaf and roll it.

Make all the leaves rolls likewise.

Steam these rolls of arbi leaves in steamer.

Take out when done and let it cool.

After they cool down, cut into small square pieces.

Deep fry these pieces in a kadhai till they become crisp and golden.

Take all out in a plate.

Make a puree of onion, ginger, garlic and chilli.

Heat oil in a kadhai, add carom seeds and heend in it and than add puree and mix.

After 2 minutes, add turmeric powder, coriander powder, red chilli powder and salt and mix it and cook it for 4-5 minutes or until oil starts separating.

Now, add fried arbi leaves and mix.

Cook it for 7-8 minutes and ready to serve.
