Croque-Monsieur with Comté Cheese

When you get home from grocery shopping and don't have much time to cook, here's a quick dish that's a classic bistro favorite: the croque-monsieur.
Most restaurants usually serve it with a cheesy béchamel sauce for extra richness, but the original recipe, dating back to the late 19th century, is simpler—like the version I'm sharing here: sandwich bread, ham, butter, and a cheese like Gruyère. Personally, I prefer Comté for its richer flavor! For the ham, I highly recommend getting good-quality ham from a local deli instead of processed ham, which has less flavor and more additives.

Preheat the oven to 410°F (210°C) using convection or broil with fan.

Line a baking sheet with parchment paper. Butter 4 slices of sandwich bread and place them on the sheet.

Cut each slice of ham into 4 pieces, then place these pieces on each buttered slice of bread. Grate cheese over each slice.

Top with the remaining slices of bread, then spread about 1 tablespoon of thick sour cream on each.

Grate more Comté cheese over the sour cream, then bake the croque-monsieur for about 15 minutes, or until the cheese on top is golden and bubbly.

Serve hot with a green salad or raw vegetables.
