Mash boiled potatoes and add carrot, green chilli, salt, corn flour, coriander and give a good mix, it will take form of a dough. Pinch medium size portion from dough and make balls. Coat balls in corn flour and keep aside.

Deep fry balls till golden brown and keep aside.
Assemble ingredients for gravy. - 3
In moderately heated pan, add oil, add garlic and sauté for few seconds, add ginger paste + onion + chilli and sauté for 1-2 minutes, then add capsicum + pepper powder and sauté for few minutes till capsicum turns soft yet crunchy.

Now add all sauce one after another + vinegar + salt, mix well and cook for 2 minutes under medium flame. Now add 1/4 cup water and cook for 2 minutes. Add corn flour slurry and stir well, wait for a boil and lastly add the balls and mix well so that the balls coats well with gravy.

Garnish with spring onion greens / coriander stems, Potato Manchurian is ready to serve.
