Season the chicken with salt, pepper, ginger and mix well.

Add egg white and mix well.

Add cornstarch and mix.

Let it marinate while you prepare the rest of the ingredients.

Heat up the oil in a wok or frying pan.
Fry the pieces of chicken until golden brown. Place it on a plate with paper towel. - 6
MAKE THE SAUCE
In a bowl mix well the chicken broth with the oyster sauce, soy sauce, chili pepper, sugar and rice wine vinegar. In a small bowl mix cornstarch and water. - 7
STIR- FRY THE VEGETABLES AND CHICKEN
Heat up a wok or frying pan with a bit of vegetable oil. Add garlic and the rest of the vegetables, stir fry for a couple of minutes. Vegetables must be stir-fry al dente and not overcooked. - 8
Add the fry chicken and the sauce.

Once the sauce is boiling, add the cornstarch mixed with the water. Mix well and let the sauce to thicken. Cook for a minute and serve.
