Watercress pork ribs soup

Rinse watercress and drain. Use kitchen scissors to cut into short strands.

If using frozen pork ribs, properly thaw it first. Rinse, drain and leave aside.

Prepare 9 slices of ginger.

Prepare 10g of red date slice. Increase the amount slightly if you want extra sweetness.

Prepare 10g of goji berries. Rinse once and leave aside.

Prepare a pot of 1200ml water enough to cover the pork ribs. Add pork ribs, 6 slices of ginger and 2 tablespoons of cooking wine. Cover and turn on high heat.

Once it starts boiling vigorously, remove the parboiled pork ribs and leave aside.

Prepare a pot of 1500ml hot water. Add the parboiled pork ribs, 3 slices of ginger, red date slice, 1 tablespoon of cooking wine and watercress. Cover and turn on high heat to boil for 20 minutes. Then turn to low-medium heat to slow boil for another 40 minutes. As watercress absorbs much water, you need to replenish with some hot water.

Add goji berries and salt. Mix evenly. Turn off the heat. Simmer for a while with the residual heat before serving.

Ready to serve with cooked rice. If you need dipping sauce for the pork ribs, use 2 tablespoons of dark soya sauce and 1 sliced red chilli.
