Four cups of full milk or cream makes 4 tablespoons of fluffy dried powder. Low Temperature Evaporation removes the moisture, leaves the flavors, the nutrients, the vitamins. Always handy to have some dried milk powder and cream powder in the freezer when you run out of fresh. Instead of disposing milk products that reach their expiration dates, why not evaporate them. Easily done overnight in your oven. Inexpensive. Makes me sleep better.

Ingredients

Overnight
2 people
  • Cupfull milk or heavy cream
  • Equipment: Oven with 100F degree temp setting, or two oven lights, remote thermometer, 4 half size baking pans, parchment paper, food processor, sieve
  • Cost: two forty watt electrical oven bulbs consume one kilowatt electricity in 12 hours, 40 cents, when evaporating 4 cups of milk or cream, 10 cents per cup

Steps

Overnight
  1. 1

    Make powder. Turn oven to 100 F degrees. (Proofing mode). If you dont have proofing mode, turn your oven lights on, or heat oven to lowest setting, cool down to 100F degrees. Place baking pans in oven covered with parchment paper, pour cup of milk or cream on top of paper in each baking dish, let milk or cream evaporate. Next morning, Crumble, pulverize, sieve, pulverize sieved particles again.

    Reconstitute milk or cream. One table spoon makes a cup. Whip or stir powder in cup of cold water, let sit ten minutes, whip again. Done.

I got certified by the University of California Master Gardener Program in 2005. I try to bring out the original flavor of ingredients, then add layers of spices, herbs and flavorings that enhance, not distort the taste.
