Ingredients

Preptime 10, cooktime 20 minutes
7 dinners
  1. 2 poundsyukon potatoes
  2. 2 poundswinter carrots
  3. 1/2 Poundpork/beef mint meatball
  4. 4 TbsMilk
  5. 2 Tbsplain panko breadcrumbs
  6. 2fresh farm eggs
  7. 2 Tbsbrown sugar
  8. 1 Tbsunsalted butter
  9. Side serve salt, pepper, nutmeg
  10. Equipment: potato masher, 6 quart dutch oven with lid, mandolin slicer, 2 cast iron skillets, one with lid
  11. Cost: potatoes $1, carrots 60 cents, onion 20 cents, meatballs & other $1.65, dinner for 50 cents if storebought veggies, 23 cents if homegrown

Cooking Instructions

Preptime 10, cooktime 20 minutes

    Scrub, cut potatoes in six, slice onion top to bottom, put in cold water with salt, boil 20 minutes, drain, add milk, mash.

    Make meatballs: mix quarter pound ground beef, quarter pound ground pork, 2 fresh farm eggs, 2 Tbs plain panko breadcrumbs, Tbs chopped fresh mint, (optional) tsp salt, tsp pepper, tsp worchester sauce, roll into walnut size meatballs. Brown in preheated cast iron skillet, medium hot.

    Meanwhile, slice carrots on mandolin, 1/4” thick, 45 degree angle, sautee in cast iron skillet with brown sugar till glazed and soft, lid on, with Tbs unsalted butter.

    Mash carrots with potatoes, add nutmeg, milk, pandrippings, meatballs all around, serve family style. Enjoy.
