I have this - or a variation on it - almost every day as a side dish with either lunch or dinner. #locarb #lowcalorie, filling and high on taste!

Ingredients

  1. 100 graw baby spinach
  2. 1/2red onion, sliced
  3. 1red pepper
  4. 2 clovesgarlic
  5. 75 gmushrooms
  6. 1/2 tspcanola oil
  7. Pinchsalt

Cooking Instructions

    First, put the oil in a pan on a medium heat, slice the onion and toss it in the hot pan

  2. 2

    While the onion is gently cooking, slice the red pepper and add to the pan.

  3. 3

    Next, carefully slice the garlic cloves and add to the pan

  4. 4

    Same for the tomatoes - slice and add to the pan, gently mixing

  5. 5

    Next, slice and add the mushrooms

  6. 6

    Lastly add the spinach, season with salt and lemon juice and carefully mix. After the spinach has wilted to your liking, serve!
