DOUGH
Place the flour, salt, and oil in a stand mixer fitted with a dough hook and start mixing.
Gradually add the water.
Mix until the dough is smooth and uniform.
Set aside.

TOPPING
Clean and slice the leeks into thin rounds.
Heat the oil in a skillet, then add the leeks.
Season with salt and pepper.
Add the water, cover, and cook for 10 minutes.
Stir in the cream and mustard.

ASSEMBLY
Preheat the oven to 350°F (180°C).
Roll out the dough thinly.
Spread the leek mixture over the dough and top with the bacon pieces.
Bake for 15 minutes.
