Ingredients

  1. 630 gcups flour
  2. 12 gactive dry yeast
  3. 19 gkosher salt
  4. 380 gwarm water
  5. 110 gunsalted butter
  6. 135 gbrown sugar
  7. 8 gpowdered cinnamon
  8. Finishing/corse salt

Cooking Instructions

    Mix dry ingredients

    Measure out warm water (my active dry yeast says 100-110F) and mix yeast into water.

    Mix water into dry ingredients for 5min or longer, until dough isn't sticky (add flour or water if needed to get right texture)

  4. 4

    Cover and proof dough for 30-60min

  5. 5

    Evenly coat the sheet of dough with butter, then sugar, cinnamon, and approximately 2g of salt

  6. 6

    Soften butter and measure out salt, cinnamon & sugar. Roll out dough into a large rectangle (I make it thin so there are more layers)

  7. 7

    Let rise for an hour, add a pinch of finishing salt on the risen buns and then bake 18-20min at 375
