Caramelized Tiny Shrimp with Starfruit

It's been a long time since I've seen starfruit. It was just by chance while eating pho that the owner, seeing I was Vietnamese, gifted me some starfruit from their garden. I was so happy and grateful, since starfruit is quite expensive here. Today, I was lucky to find some boxes of tiny river shrimp at the market. So I finally satisfied my craving for caramelized tiny shrimp with starfruit.

So I finally satisfied my craving for caramelized tiny shrimp with starfruit.

First, place the shrimp in a mesh strainer and rinse thoroughly to remove sand and reduce saltiness. Let the shrimp drain, then marinate with 1 tablespoon soy sauce, 1 tablespoon sugar, chopped green onion and garlic for 10 minutes. Chop the green onion, garlic, ginger, and starfruit into small pieces.

Add a little chili and black pepper to the shrimp for extra flavor. Sauté the green onion and garlic in a pan until golden, then add the shrimp and stir over medium heat. When the shrimp start to turn pink, add the starfruit and adjust the seasoning to taste.

When the shrimp are dry on the surface, add the green onion and ginger, stir well, and turn off the heat. When serving, you can add extra julienned ginger to eat with the shrimp.
