Assemble ingredients

In a moderately heated pan, add butter, add cumin seeds and allow to crackle, then add chopped onion and sauté till translucent.

Now add ginger garlic paste and sauté till rawness goes off. Then add all veggies except tomato, and cabbage.
Sauté for 4-5 minutes by adding salt. - 4
Now add capsicum + cabbage and sauté for 3-4 minutes.

Now add tomatoes, mix well and sauté for 3-4 minutes

Now add all spices and mix well, stir fry for 4-5 minutes till spices release oil. During this stage, mash veggies as much as possible. I prefer chunky, so mashed lightly.

Now add mashed potato and mix well. Add warm water and stir well.

Now add warm water as per requirement (preferred gravy consistency) and cook/simmer for 3-4 minutes. Add chopped coriander and mix well.

Lastly, add lemon juice + butter, mix well and bhaji is ready.

Toast pav in sufficient butter by adding pav bhaji masala, toast nicely and serve with bhaji along with finely chopped onion + tomato and lemon pieces.
