🫒💚 Homemade Lebanese pickled green olives - Zeytoun Akhdar

Olive season is one of the happiest seasons that everyone looks forward to in Lebanon. It’s when family gatherings, lunches, kids happy times, and all the beautiful memories happen under the shade of olive trees 🫒
Usually, if we don’t pickle our own olives, we buy them directly from someone who does, but we never buy the supermarket ones! (At least I don’t know anyone who does!)
Last month was olive season in Lebanon. My sister and brother in law decided for the first time to prepare it at home instead of counting on my mum or my sister’s in laws to make it for them! Here’s the result 😊

It’s olive season 😍

Place the olive in a big colander. Discard bad or rotten grains. Rinse under cold running water.

Using a stone, or heavy tool, gently crack the grain open. Just one gentle crack. Place again in the colander and rinse for a second time. The soak in water for 4 hours to get rid of the extra bitterness

Drain, add two tablespoons of coarse salt, and rub the grains well with the salt.

Place some lemon slices at the bottom of a jar, add some olives, then chilli pepper, lemon again, and olives

Fill the jar with water, and about the last 5cm of the har pour extra virgin olive oil, almost 1 cup. Set aside and it’ll be ready for consumption in 5 days or a week! They’ll last for over a year if properly sealed and stored. 💚

Every time I go to Lebanon, I bring some of this great goodness with me. Nothing’s like the REAL homemade deliciousness.
