Moist and spongy Orange chocolate cake (using vegetable oil - no butter)

We had this cake for Thanksgiving dinner. Not a typical dessert for this occasion but that’s all what I could make as we didn’t have anything else and everybody loved it!
That’s exactly how my mom makes it, but she never remembers the exact measurements!! It’s the most traditional way in Lebanon to make cakes, with or without chocolate powder.
Luckily I found a similar recipe by a Lebanese food blogger called Husni Ramadan and it came out perfectly.

Preheat the oven to 180C and lightly grease a 20x20cm tin with butter, veg oil or a drizzle of tahini

Beat eggs + sugar with a whisk until the mixture has thickened and turned pale yellow

Add 1/2 cup of vegetable and mix

Add the orange juice, zest, vanilla extract and yogurt. Combine again. Yogurt will make the cake extra moist!

Now the dry ingredients: flour, cocoa powder, baking powder, baking soda, pinch of salt. Combine very well with the whisk until you get a smooth mixture.

Pour the mixture in the tin and bake for 35 minutes on 180C the for another 8-10 minutes on 150C. Poke with a knife or a toothpick in the center of the cake to check doneness. If it comes out dry, it means it’s ready!

Let the cake sit in the tin for 15 minutes. When it’s cooled down, decorate with ganache if you like.
