Cooking Instructions

Pre heat oven to 180 fan

Chop all your veg in to 2cm chunks
- 3
Sprinkle over the olive oil and add salt and pepper and give a good old mix

Take the leaves of the thyme and roughly chop along with the garlic
- 5
Rub the herby garlic mix all over the chicken along with Salt and pepper
- 6
Make little wells in your veg and snuggle in the chicken

Place in the oven and cook for around 30 mins everything should start to look toasty

In a jug add the cornflour and make into a paste with a little of the water then add the stock cube and the rest of the water and mustard, this will be your gravy

Add this mix to your pan and cook for a further 15-20 mins

Once all thickened and all cooked through place in the centre of the table and dive in

This dish is basically my version of 40 clove chicken, adapted to be made entirely by stovetop rather than in the oven. It uses a technique I read about a while ago (the name of which escapes me), which said to start frying the chicken in a cold pan, without any oil. Presumably, it allows the chicken fat to render more slowly, resulting in more golden skin and more succulent meat. I've had mixed success with this method, so I've taken to using a nonstick pan just to be sure the skin doesn't stick and rip. If you try it, you might want to do the same. Robert Gonzal -
