Madras fish curry 🐠

Madras fish curry is an onion and tomato based curry along with tamarind. Coconut is not used in this curry.tamarind gives this dish a wonderful flavour. Course: lunch, dinner,ln Chennai people have this dish in breakfast with dosa, Diet : non-vegetarian, gluten free. Nutrients valve: omega-3 fatty acids, vitamin D and B2 and minerals- iron, iodine, zinc, calcium.

Wash fish 🐠 pieces in cold water 💧, pat dry on kitchen towel. In a small bowl 🥣 add turmeric powder, salt mix well and coat on fish pieces 🐟 from both sides, marinate for 30 min- 35 mins. Soak tamarind in water 💦, when it's soft squeeze out the pulp, discarding the seeds, sieve the pulp and keep aside.

For masala paste: take a small mixer and add chopped onions 🧅, garlic cloves chopped 🧄, curry leaves 🌱, black pepper corns and cumin seeds, blend to make a thick paste, using little water 💦 and set aside.

For gravy: heat oil in a deep wok, add mustard seeds, when mustard seeds start to crackle, add split black gram, fenugreek seeds, cumin seeds, curry leaves 🌱 and finely chopped green chillies saute for 1 min and add crushed garlic 🧄, fry for few sec, add finely chopped onions 🧅 adding a pinch of salt and saute until it turns transparent.

Add masala paste and fry for 10 mins or until it turns golden brown and leaving oil to the sides, add finely chopped tomato 🍅 along with turmeric powder, red chilli powder/ kashmiri red chillies powder 🌶️, coriander powder, madras curry powder and salt 🧂 and fry for 10 mins, untill the oil separate.

Add thick tamarind extract and some water 💦 and bring to boil.when the base gravy boils, vigorously start adding the fish pieces 🐠 one by one (do not stir) after adding fish, as it's flesh is delicate and stirring harshly can break them and mix up in the gravy.

Cook it open pan for 3-4 mins, and simmer for few mins after adding curry leaves 🌱, remove from flame and serve hot with rice 🍚, dosa, naan.

Garnish with finely chopped coriander leaves 🌿.
