Potato Stuffed green chilli subji is a quick and healthy appetizer/side dish made with mildly spiced potatoes filled into chilli peppers. I have used mildly spiced potato filling, made with Boiled Mashed Potatoes, finely chopped onion, crushed ginger and garlic, finely chopped Cilantro.

Potato Stuffed green chilli subji is a quick and healthy appetizer/side dish made with mildly spiced potatoes filled into chilli peppers. I have used mildly spiced potato filling, made with Boiled Mashed Potatoes, finely chopped onion, crushed ginger and garlic, finely chopped Cilantro.

Wash green chilli and mark a cut on it lengthwise in such a way it is cut on one layer only. Deseed it. Peel, Wash and chop onion, ginger, garlic and chop coriander leaves. Peel boiled potatoes and mash it.

Heat 1 tb spoon cooking oil in a wok. Add cumin seeds and when cumin seeds splutter add asafoetida. Now add chopped ginger and garlic and saute for 30 seconds. Add chopped onion and cook till onion gets golden brown colour.

Now add salt, red chilli, turmeric, coriander seeds powder and mix well and cook for 30 seconds. Now add boiled and mashed potatoes and mix well. Saute for 1 minute.

Add chopped coriander leaves and mix well. Transfer it in a plate and let it cool.

Now stuff tbis mixture in slit chillies as shown in pic below.

Now heat 1 tb spoon cooking oil on a griddle and place stuffed chilli over it and shallow fry till crispie golden from all sides.

Serve hot with chapatti raita and salad as a meal in lunch or dinner.
