Asian Chicken & Vegetable Stir-fry

Ingredients

Prep 10 to 15 min, Cook 15 min

  1. For Stir-fry
  2. 6 oz (170 g)Chicken thigh -Skin removed
  3. 1/2Medium Onion
  4. 1Medium Bell pepper -Any colour
  5. 2 cups (170 g)Broccoli florets -Frozen
  6. 1/4 tspGinger powder
  7. 1/8 tspGround black pepper
  8. 1 tbsp (15 ml)White wine or Sake
  9. DashSesame seeds
  10. 1/2 tspLess salt soy sauce -Optional
  11. For Condiment (Asian peanut paste - Recipe # 16662413)
  12. 1 tbsp (15 ml)Unsalted Peanut butter
  13. 1 tsp (5 ml)White vinegar
  14. 1 tsp (5 ml)Honey
  15. 1/2 tsp (2.5 ml)Less salt soy sauce
  16. 1/2 tsp (2.5 ml)Sesame oil
  17. This recipe is intended to be compatible with the diet of individuals with diabetes, kidney and heart disease, but please consult your doctor, renal nurse, nutritionist or other medical professionals!

Cooking Instructions

Prep 10 to 15 min, Cook 15 min

    Mix all ingredients to make Asian peanut paste. Set-aside.

    Cut Chicken into strips, then rub White wine into it. Set-aside.

  3. 3

    Slice Onion and cut Bell pepper into strips, and measure Broccoli florets. Set-aside.

    Heat a fry pan to Med-High temperature and add Olive oil.

  5. 5

    Fry Chicken from step 2 until surface turns white, then add vegetables from step 3 and cook until onion becomes slightly transparent.

    Add Ginger powder, Black pepper and Asian peanut paste from step 1 and stir-fly about 3 min.

    Sprinkle Sesame seeds on top. Enjoy!

    Option: Serve with rice or Asian noodles, and sprinkle 1/2 tsp Less salt soy sauce on top of this dish depending on your daily nutritional needs.
