Assemble ingredients, chop potato into pieces, fry papad and break into pieces and keep aside. Fry potato pieces till golden brown and keep aside.

In moderately heated pan / kadha, add oil Aloo to heat add bay leaf + cumin seeds and allow to crackle. Add green chilli + chopped tomatoes and sauté for 1-2 minutes, then add all spices + little water and sauté till spices release oil.

Then add water + salt and give 3-4 times of rolling boil, then add fried potatoes + papad, mix well and cook for 2-3 minutes. Simmer and cook for around 2 minutes and dish is ready to serve. Few potato pieces can be mashed and add back to gravy for thicker gravy.

This dish goes well either with paratha or plain steamed rice.
Have garnished with designer carrot which is optional.
