For most vegetarians ' dal' or lentils and legumes are one of the most source of protein. This navaratan dal tadka as the name indicates is a lentil based recipe prepared by using nine different kinds of dal such as dried yellow pea, moth bean, whole green gram, split black gram, whole black gram, whole red lentil with husk, chick pea, red gram , red kidney bean. I usually keep the consistency of dal thick as I serve it with chapati, naan or Paratha. You can serve along with zeera rice or any vegetable pulao.

Ingredients

30 minutes
2-3 servings
  • 200 gmmixed dal (soaked overnight)
  • 1Onion (medium sliced)
  • 2 tspGinger garlic paste
  • 1Tomato - big (Finely chopped)
  • 2Green chillies (Finely chopped)
  • 1/2 tspTurmeric
  • 1/2 tspRed chilli powder
  • 1/2 tspGaram masala powder
  • 1 tspdried Fenugreek leaves
  • 2 tbspOil
  • 1/4 tspSugar
  • as requiredSalt to taste
  • 1bay leaf
  • few sprigsFreshly chopped coriander
  • To dry roast and grind
  • 2Green cardamom
  • 1 inchCinnamon
  • Cloves3
  • 1/2 tspCumin seeds
  • 1/2 tspCoriander seeds
  • 1Dry chilli-
  • 1/4 tspFenugreek seeds

Steps

30 minutes
  1. 1

    Soak the mixed dal over night or 8 hrs. Next morning wash the soaked dal and pressure cook by adding salt, a little bit turmeric powder and 1 bay leaf. Pressure cook for 2-3 whistle.

    In a pan dry roast masala and grind them to prepare a fine powder. Keep aside.

    Heat oil in a deep pan, add 1/4 tsp of sugar and let it caramalize then add sliced onion. Sautee till they become translucent.

    Next add dried Fenugreek leaves and ginger garlic paste.

    Sautee for 2-3 minutes over low heat.

    Next, add chopped tomato, turmeric powder,red chilli powder, freshly ground masala, salt, chopped green chillies. Cook until the oil separates.

    Now add boiled mixed dal and mix everything well.

    Now add 1 and 1/2 cup of warm water (according to your desired consistency)

    Let it simmer for 5-10 minutes. Now add freshly chopped coriander leaves

    Adjust Salt and add garam masala. Mix well.

  11. 11

    Switch off the heat. Now it's time to serve along with chapati, naan, Paratha or zeera rice according to your preference.
