*I used popsicle molds that I bought off Amazon, that came with popsicle sticks.*

For this recipe I made cotton candy flavored cakesicles. You can incorporate any flavor, based on the flavor of cake mix you use, and or the yogurt flavor you add. (:

Ingredients

  1. 1 boxcake mix (I used party rainbow chip by Betty Crocker)
  2. 1 cupmilk
  3. 3eggs
  4. 3 tablespoonsyogurt (I used danimals cotton candy flavored yogurt)
  5. 3 tablespoonsdry pudding mix (I used vanilla)
  6. 1/3 cupfrosting (I used rainbow chip)
  7. Chocolate shell (to dip the cakesicle in)
  8. 32 ozmelted and tempered Ghirardelli white chocolate melts

Cooking Instructions

    Mix cake mix in a bowl with eggs, milk, yogurt, and dry pudding mix. I skipped the oil, and used milk instead of water.

    Bake cake as suggested on the back of cake mix box.

    When cooked crumble the cake and blend it together with the frosting.

  4. 4

    Add more frosting if desired until the cake ball filling has a truffle like texture.

    Spoon 1 tbs of the melted white chocolate into the popsicle mold

    Paint it into a thin layer on the bottom and sides of the popsicle mold

    Then take a popsicle stick and put into the bottom small whole where the stick will go. Then immediately remove. This is to just remove any chocolate in the entry for the stick.

    Repeat making 4 + white chocolate shells in the mold.

    Pop the molds into the fridge if using pure white chocolate, and the freezer if you’re using confectionery coating.

    Let chill for 3-5 minutes or until the candy hardens

    Scoop about 1 tablespoon of the cake ball filling and press into the candy shell. Leaving atleast 1/16 of an inch of space at the top for additional layer of chocolate.

    Repeat filling all the popsicles

    Take about 1 tsp of your melted white chocolate and put over top of the cakesicle filling in the molds. Spread into a thin layer.

    Use an offset spatula to scrape any excess chocolate.

    Repeat covering all the sicles with chocolate.

    Chill for about 2 minutes until the candy shell hardens.

    Take out and gently unmold the cakesicles. Add the sticks. Then they are ready to serve.
